Meatless Monday: Sun-dried Tomato and Swiss Omelet

Happy Canada Day!

It’s Meatless Monday, the breakfast edition. Now, I’m not sure if this is considered a cheat or not but we’re going with no. I love eggs and until my body says otherwise, I am going to keep eating them by the dozen.

I’ve done a few dinner posts but in an effort to broaden my horizons I decided to include an easy breakfast recipe.

Sun-dried Tomato and Swiss Omelet

I’m usually hesitant to say how many recipes serve as that is up to you and how hungry you and your family are but for this recipe, it is a single serve option.

  • 3 sun-dried tomatoes
  • 2 garlic cloves
  • salt and pepper to taste
  • olive oil
  • 2 eggs (yes the whole egg is fine)
  • 1 Babybel Swiss cheese (this was an accident… it was all we had cheese wise)

Directions

IMG_0338In a mini chopper or food processor (food processor will probably be too large), chop sun-dried tomatoes, garic, salt, pepper and a splash of olive oil until you create a paste.

Cut Babybel into small slices.

Heat a pan on medium. Whisk eggs together with a sprinkling of salt and pepper (I add Tabasco as well) and pour into pan. When the eggs are just about set. Add sun-dried tomato mix and cheese and fold over until the egg is still springy to the touch. Remember, it will continue to cook when you take it off of the stove. You don’t want tough dried eggs.

Eat it up!
