Culinary Nutrition Expert Program – Week 1

This week, I started my journey toward becoming a Culinary Nutrition Expert (CNE). I’m always interested in furthering my nutrition knowledge and this sounded like the perfect opportunity. I chose this program specifically because it combines two of the hobbies I love the most: cooking and healthy eating. I also chose this course because it challenges so many of the principals I practice as a ‘healthy’ eater (more on that in another post). I believe it is important to expose yourself to a variety of teachings that allow you to form a well researched/rounded opinion on nutritional topics.

Week 1 was all about setting the basis of my knowledge by learning all about the Fundamentals of Nutrition with the awesome Josh Gitalis. If you’ve been a follower for some time you know I’ve taken a few Nutrition courses and even bought myself a nutrition textbook just for fun (nerd alert!). This week was a great reminder of important facts to remember when approaching cooking from a nutritional perspective.

Each week in the CNE program, we are required to create recipes based on a theme. This week’s cooking theme was Low Glycemic Eating. I made Curry Powder, Sunflower Seed Pate, Veggie Rice Wrap and Almond Dipping Sauce.
