Culinary Nutrition Expert Program – Week 2


This week’s topic was Eating for Awesome Energy. This module was perfect as I’ve had trouble with finding any amount of energy since the petite princess has entered the world. She doesn’t sleep… ever! I’m so exhausted all of the time and while I realize that only sleep will cure what ails me, a nutritional boost is most welcome to keep me functioning during the day.

There is no magic food for boosting your energy but I have learned about how to eat so that I maintain a steady state of energy throughout the day.

This week’s recipes focused on our favourite types of foods: comfort foods. I’m not going to lie, when I saw the recipes for this week’s class I wasn’t sure what to expect. In the spirit of being completely transparent I will admit that I am not a big fan of curry. I eat it very sparingly and I’m very picky about how I like it to be cooked.

The two recipes we were required to cook this week were: Indian Stew and Cauliflower Millet Mash. I subbed the millet in my recipe for quinoa… hello protein boost! I thought it was absolutely fantastic and I can’t wait to make it again. I keep wondering how this would work in a shepherds pie type recipe. Stay tuned for more experiments in the kitchen.
